I Cooking Tree serverar vi utsökt Peach Daquoise och vi visar dig hur du gör det från grunden.

Jag gjorde persikadacquoise med en fin konsistens genom att lägga till stora bitar av vackra persikor~

Jag använde hårda persikor genom att koka dem i oligosackarid, och konsistensen är inte lika mjuk som vanlig burkmat, utan krispig och seg, så det är riktigt gott~

Jag bakade dacquoise i en cirkel för att matcha storleken på persikan och slipade den med färskostkräm.
Färgen är vacker och det ger en härlig känsla~

Persikor har en vacker färg när de kokas tillsammans med skalet.

Efter kokning med skalet, ta bort skalet medan det är något varmt och kyl det att använda. När du tar en tugga fyller den din mun och du kan njuta av den doftande och smakrika smaken.

Ingredienser

  • 1 persika
  • 200 g vatten
  • 70 g stärkelsesirap
  • 6 g citronsaft
  • 90 g Äggvita
  • 40 g socker
  • 3g vaniljextrakt
  • 65 g mandelpulver
  • 50 g pulveriserat socker
  • 15 g kakmjöl
  • 70g Kraftig grädde
  • 15 g socker
  • 100 g färskost

Gör så här

  1. Lägg de skurna persikorna, vattnet och oligosackariderna i en kastrull och koka (cirka 15 minuter). När persikorna blivit mjuka, tillsätt citronsaft och låt koka i ytterligare 5 minuter, överför sedan till en annan skål.
  2. Skala persikorna och kyl dem.
  3. Vispa äggvitorna och när stora bubblor dyker upp, tillsätt socker och vaniljextrakt och vispa dem till en maräng med horn.
  4. Sikta mandelpulver, sockerpulver och mjukt mjöl, blanda och överför till en spritspåse.
  5. Pan på ugnsformen, strö över strösocker, grädda i en ugn förvärmd till 170 grader i 15 minuter och svalna.
  6. Tillsätt socker till kall vispad grädde och vispa, tillsätt sedan kall färskost och vispa till grädde.
  7. Pressa grädde på den avsvalnade dacquoise, lägg persikor på den, pressa grädden och täck med annan dacquoise för att avsluta.
